Lasagna with Red Gold Tomatoes

The holidays are over, you've put in a good solid week at the gym as part of your new year's resolutions, you're tired of your new diet and it's cold, very cold outside.  What better than some comfort food of home made lasagna!  Red Gold sent me a Red Pack with all the basic fixins to make a classic lasagna.  If you're unfamiliar with the company, Red Gold is a family run business that has been around since 1942.  They are the largest privately owned tomato processor in the nation! 



2 -- 14.4 oz. cans of Red Gold diced tomatoes with basil, garlic and oregano
1 -- 28 oz. can of Red Gold crushed tomatoes
1 package of lasagna noodles
1 -- 15 oz. container of ricotta
1 lb. of sweet sausage
2 garlic cloves chopped
1 cup of mozzarella
1 cup of parmesan
1 cup chopped spinach
1 tablespoon of sugar

  •   Gather your Red Gold tomatoes and preheat the oven to 375 degrees

  • Brown the sausage, add the garlic and cook through, then add the tomatoes and the sugar
  •  mix the ricotta and the spinach together 
  • Spread a cup and a half of the meat sauce onto a casserole dish and layer 5 of the lasagna noodles, slightly overlapping
  • Dollop some of the ricotta mixture over the noodles

  • Sprinkle some of the mozzarella over the ricotta dollops and pour a cup of the meat sauce on top of that
  •  Continue layering two more times

  • After you've done the final layer, pour the rest of the sauce on top and sprinkle the rest of the mozzarella on top of that and cover that with the parmesan :-)

  •  Cover with foil and bake covered for 45 minutes, remove the foil and bake for another 15 mins, grab your spatula (Thank you Red Gold for my new one!) and dig in
